For me..

1) St George Budapest 1971-74
They won everything from GFs to winning the Interstate Championship beating all 4 Melbourne teams, to winning International Tournament in Japan beating the hosts as well as a leading Danish team Frem 3-0
To having half the Socceroos in a successful FIFA World Cup Qualifying
campaign through Asia that includes Israel and NZ.
Special memories 

2. Brisbane Roar 2010-12
2 GF wins in front of over 50,000 fans including  one of which was the greatest GF ever played.
36 game unbeaten run

3. Melbourne Victory 2006-07

A joy to watch Fred, Thompson with 15 goals
Averaged 30,000 per game
Won the GF 6-0 in front of 55,000…with Fred providing 5 assists for Archie

What and how do you define success....

Is it Socceroo's developed , is it competition wins, is it crowds and spreading of the game, is it how much positive media a team brings...

To date people have mainly looked at competition success... I would argue brining along top talent for national teams and in this area its actually hard to go past the Mariners who have on a per year basic an amazing success in player development, followed by some NSL teams, equally AU is not bad in this area.

If crowds and a positive spreading of the game then its impossible to look past MV .....

For international titles hard to go past WSW and in the Asian Champions league...

For most titles hard to pass South Melbourne...

If I had to pick a club for me its a toss up between MV & South Melbourne... but my vote goes to MV simply because of their crowds and the positive media attention... SM as a kinda overall winner if you add players developed added to competitions won, and that club world cup performance...
